Two Words:

Kale Chips...................

Since our neighborhood swim meet was postponed due to heavy lightening and rain, I found myself with some extra time on my hands. I was at whole foods earlier today and picked up some gorgeous looking kale- purple and green varieties. Last summer, I spoke frequently about kale as I discovered what a great salad green it makes, and we ate lots of it. In recent months, I've talked of nothing but asparagus and brussels sprouts (and I did buy brussels sprouts today) as it's been a recent obsession of mine. So...I was reading the blog of a friend, who was talking about her kids gagging on some of her recent veggie recipes (her kids are young and have a strong gag reflex, I don't think it reflects on the taste of her dishes). Anyway, she mentioned kale chips being a family favorite and she included a link to the recipe. I thought, "hey, I have kale in the fridge and I have some time on my hands". So, I made kale chips! They are really delicious! I could see my family enjoying these all summer long!

To make them, you simple take the kale off the stem, tear into bite size pieces, wash and spin (or dry) the kale. Place the kale on a cookie sheet, drizzle with a tiny bit of olive oil, sprinkle with sea salt and bake in a 375 oven for 15 min. You should try it- they are so good.
