been cooking up a storm

I have gone almost two weeks straight making a home cooked, from scratch meal for my family, many of those meals have been using the new recipes that seem to be everywhere all of the sudden. I am having a blast cooking them too. Each day that passes, I find myself continuing to look forward to my time in the kitchen. If I am working, I anticipate coming home to do my dinner prep. I think I am forming a nice little habit because since returning to the workforce four years ago, I literally would fly by the seat of my pants until recently. I would come home at 5 or 5:30 and frantically search for what might be available, or, order takeout. Planning a week in advance has helped a lot. It's a huge help to know what's on the menu that night and what to shop for when I visit various stores through the week.

Some of the fun (to me!) things we've had recently:
minestrone soup. home- made bread. home-made mac and cheese using all sorts of different concoctions of cheeses. lebanese lentils and a warm roasted eggplant salad. spinach and cheese stuffed portobello mushrooms. roasted beets. (we had fun discovering what beets did to the color of your pee!!). chicken wings. ginger carrot soup. baked flounder. penne with spinach sauce.

The chicken wings were the biggest surprise. Not the healthiest choice but OH MY GOODNESS they were unbelievable. Ten times better than any I have EVER put in my mouth. I'll be happy to make them for any of you. Just ask.

Well, it's time for the chicken and dumplings to be served, so I'll sign off for now. I promise not to talk only about food and cooking for the rest of my blogging life :) Just enjoying it right now!
